LET’S MAKE IT

Smoked Haddock & Leek Gratin with Seeded Crumb Topping

Nutrition & tips

Method

1

Soften the leeks

Heat the oven to 180°C fan / 200°C conventional. Melt the butter gently in an approximately 20cm non-stick saucepan. Add the leeks and 3 tbsp water, cover and cook gently for 6–8 minutes until soft. Stir occasionally; add another splash of water if they catch.

2

Make the creamy sauce

Stir the flour into the soft leeks and cook for 1 minute. Gradually stir in the milk, then simmer gently for 2–3 minutes until lightly thickened. Remove from the heat and stir in the crème fraîche, mustard, lemon juice, half the parsley and the pepper.

3

Wilt and squeeze the spinach

Put the spinach in a colander and pour over a kettleful of boiling water. Let it cool enough to handle, then squeeze out excess moisture and roughly chop. Fold it into the leek sauce. Check the haddock for bones again and fold in the raw fish chunks.

4

Top and bake

Transfer to an approximately 20 × 15cm shallow baking dish (about 750ml capacity). Scatter the fresh seeded crumbs evenly over the top; the bread’s own seeds and fat help them toast, so no extra oil is needed. Bake for 20–25 minutes until bubbling at the edges, the topping is golden and the fish flakes easily. Check the centre is piping hot and reaches 70°C for 2 minutes, or 75°C for 30 seconds. Cover loosely if the top colours early.

5

Rest and serve

Rest for 3 minutes, scatter over the remaining parsley and divide the complete gratin equally between two plates or shallow bowls. The full sauce and topping belong in each serving.

Nutrition & tips

Estimated per serving: half the gratin, including all fish, vegetables, sauce and seeded crumbs.

Estimated per complete serving: 289 kcal; protein 35.8g; net carbs 10.7g; sugar 6.1g; fibre 5.3g; fat 9.8g; saturates 4g; salt 1.9g.

Estimated UK carbohydrate: 10.8g per serving. UK carbohydrate already excludes fibre, so fibre has not been subtracted again. Net carbs use the featured SRSLY product’s published net-carb figure, accounting for its listed polyols once. These are estimates; brands, drained weights and portions change the numbers.

Smoked haddock is already salted, so taste the finished dish before adding any extra. The estimate includes no added salt.

Squeezing the spinach prevents a watery sauce. Keep the dish shallow enough for the fish to cook evenly beneath the crumbs.

The nutrition uses smoked haddock at 77 kcal per 100g and reduced-fat crème fraîche at 170 kcal per 100g. Check your packs: fish, dairy and bread quantities can move the estimate above 300 kcal.

Allergens: Wheat/gluten, oats, egg, sesame, fish, milk and mustard. Check crème fraîche, bread and mustard labels.
