LET'S MAKE IT

Mushroom, Spinach & Cheddar Seeded Bread Strata

Makes 2 servings. One serving: half the bake plus salad. Nutrition includes every stated ingredient, cooking fat, topping, dip and side.

Nutrition & tips

Method

1

Cook out the moisture

Heat 1½ tsp oil in a large non-stick frying pan over medium-high heat. Cook the onion and mushrooms for 7–8 minutes until the mushrooms are browned and their liquid has evaporated. Add garlic for 30 seconds, then spinach and stir until wilted. Let excess liquid evaporate.

2

Soak the bread

Use the remaining ½ tsp oil to grease an approximately 18cm-square baking dish, about 4–5cm deep. Whisk the eggs, milk, mustard and pepper. Mix the bread cubes with the vegetables and half the Cheddar, put in the dish and pour over the egg mixture. Press down lightly and rest for 15 minutes.

3

Bake until set

Heat the oven to 180°C fan / 200°C conventional while the bread soaks. Scatter over the remaining Cheddar and bake for 30–35 minutes until risen, lightly golden and set in the middle with no liquid egg visible. Cover loosely with foil if the top colours before the centre sets.

4

Rest and serve

Rest for 5 minutes, then cut the bake in half. Serve each half with half the leaves and tomatoes. The salad is included in the stated nutrition; no extra dressing is included.

Nutrition & tips

Estimated per complete stated serving: 471 kcal; protein 33.7g; net carbs 13.6g; sugars 8.7g; fibre 10.3g; fat 28.2g; saturates 8.6g; salt 1.4g.

One serving is half the bake plus salad. All stated cooking fat, coatings, toppings, sauces, dips and sides are included. Total elapsed time: approximately 80 minutes. Chilling or soaking is included; some steps can overlap.

Cooking the mushrooms and spinach first prevents a watery centre. The bread needs 15 minutes to absorb the egg mixture before baking.

A much deeper or narrower dish takes longer: check that the centre is fully set before serving.

Use vegetarian mature Cheddar if required. Any extra dressing or butter adds to the stated nutrition.

UK carbohydrate: approximately 13.8g per serving. UK carbohydrate already excludes fibre: do not subtract fibre again. Net carbs use the featured SRSLY product’s stated values, allowing for its listed polyols. Nutrition is estimated using current SRSLY product tables and representative ingredient labels; brands and actual weighed portions vary.
