LET'S MAKE IT

Makes 2 servings. Nutrition includes all stated ingredients, toppings, sauces and cooking fat.

Nutrition & tips

Method

1

Soften the leek

Heat the oven to 180°C / 160°C fan. Use a small dab of the measured butter to grease an approximately 18 × 13cm, 600–750ml baking dish. Melt the remaining butter in a small non-stick pan and soften the leek for 6–8 minutes, adding a splash of water if needed.

2

Arrange the croissants

Split the mini croissants horizontally, keeping each top with its base. Put the bases in the dish and scatter over the leeks and ham. Replace the croissant tops so they remain visible.

3

Add the custard

Whisk the eggs and milk together with black pepper. Pour around and over the croissants and leave for 5 minutes to absorb. Scatter the cheddar between the croissant tops.

4

Bake and share

Bake for 25–30 minutes until the egg mixture is fully set and steaming hot in the centre and the tops are golden. Cover loosely with foil if they colour too quickly. Rest for 5 minutes, then divide the whole dish equally between two people.

Nutrition & tips

Estimated nutrition per complete stated serving: 410 kcal; protein 25.5g; net carbs 6.7g; sugars 4g; fibre 7.9g; fat 29.1g; saturates 14g; salt 1.8g.

One serving is half the bake, including two mini croissants, one egg and half the filling. Dish size matters: a very large dish can dry the custard out. Extra breakfast sides are not included.

Nutrition is estimated using current SRSLY product values and representative ingredient labels. UK carbohydrate values already exclude fibre: do not subtract fibre again. Values vary with brands and actual weighed portions.
