Big spices. Plenty of crunch.

The spices do the work here: cumin, coriander, paprika and a touch of cinnamon make chickpeas feel like something to look forward to. Fill the whole bagel generously, then put any remaining vegetables and slaw alongside so every part of the stated serving stays on the plate.

LET’S MAKE IT

Shawarma-Spiced Chickpea Bagel with Lemon Tahini

Nutrition & tips

Method

1

Roast the spiced filling

Heat the oven to 190°C fan / 210°C conventional. Pat the chickpeas dry. Toss them with the pepper, onion, olive oil, cumin, coriander, paprika, turmeric, cinnamon and pepper on a roughly 30 × 25cm non-stick roasting tray. Spread in one layer and roast for 20–25 minutes, turning halfway, until the vegetables are tender and the chickpeas are hot with lightly crisp edges.

2

Make silky lemon tahini

Stir the tahini with the garlic and 2 tsp lemon juice. It may thicken at first; add cold water 1 tsp at a time, stirring, until smooth and spoonable. About 1–2 tbsp water is usually enough. Water changes the consistency, not the calculated nutrients.

3

Add the cabbage crunch

Toss the shredded cabbage with the remaining 2 tsp lemon juice and most of the parsley. Lightly toast the bagel halves for about 60 seconds, following pack guidance.

4

Fill and serve the whole portion

Divide the roast mixture, cabbage and tahini into two equal portions. Fill each whole bagel with as much of its chickpea mixture and cabbage as fits comfortably, spoon over some tahini and add the lid. Serve the remainder of that portion alongside and finish with the remaining parsley and tahini. All filling, sauce and sides are included in the estimate.

Nutrition & tips

Estimated per serving: 1 whole bagel, half the chickpea-vegetable mixture, slaw and lemon tahini.

Estimated per complete serving: 431 kcal; protein 31.1g; net carbs 28.8g; sugar 7.3g; fibre 13.6g; fat 18.4g; saturates 2.5g; salt 0.5g.

Estimated UK carbohydrate: 28.8g per serving. UK carbohydrate already excludes fibre, so fibre has not been subtracted again. Net carbs use the featured SRSLY product’s published net-carb figure, accounting for its listed polyols once. These are estimates; brands, drained weights and portions change the numbers.

Use canned, drained chickpeas, not the same weight of dried chickpeas. Keep any unused chickpeas refrigerated in a covered container and follow the tin’s guidance.

Tahini varies in thickness. Stir the jar before weighing and loosen the measured serving with water rather than adding extra oil.

This bagel has a larger carbohydrate serving than several of the meat and fish recipes, mainly because chickpeas contribute carbohydrate as well as protein and fibre. Use the visible estimated net-carb figure to compare portions.

Allergens: Wheat/gluten, oats, sesame and soya. Check tahini and bagel labels for additional allergens.
