WHY YOU'LL LOVE IT

Plant-based lunch with a proper peanut punch

Tearing firm tofu gives it edges that turn golden in the air fryer. A measured spoonful of peanut butter makes a glossy sauce when loosened with warm water and lime, keeping the filling creamy without drowning the vegetables.

Makes 1 serving. Nutrition includes all stated ingredients, toppings, sauces and cooking fat.

Nutrition & tips

Method

1

Crisp the tofu

Preheat the air fryer to 190°C. Tear the tofu into small bite-size pieces, pat dry and toss with the olive oil. Spread in a single layer and cook for 12–15 minutes, shaking halfway, until golden at the edges and piping hot.

2

Stir the satay sauce

Mix the peanut butter, soy sauce, lime juice, garlic and chilli with 1 tbsp warm water. Add a further teaspoon or two of water until spoonable; no extra oil or sugar is needed.

3

Prepare the crunch

Toss the cucumber, cabbage, carrot and coriander together. Warm the wrap briefly in a dry non-stick frying pan over low heat until flexible.

4

Fill and roll

Coat the hot tofu with half the sauce. Spread the rest over the wrap, add the vegetables and tofu, then fold and roll. Cut in half and serve immediately.

Nutrition & tips

Estimated nutrition per complete stated serving: 433 kcal; protein 38.6g; net carbs 13.8g; sugars 5.8g; fibre 11.6g; fat 21.9g; saturates 3.4g; salt 1.1g.

One serving includes the whole wrap, all the tofu, peanut sauce and olive oil. Calculation uses extra-firm tofu at 145 kcal and 16.5g protein per 100g; other tofu brands vary. Air-frying gives crisp edges without a breadcrumb coating. Add water to loosen the sauce rather than more nut butter.

Nutrition is estimated using current SRSLY product values and representative ingredient labels. UK carbohydrate values already exclude fibre: do not subtract fibre again. Values vary with brands and actual weighed portions.
