WHY YOU'LL LOVE IT

A lighter bagel with plenty of flavour

The sesame bagel already brings protein, so a thin layer of salty halloumi can give the filling its character. Finely shredded cabbage cooks quickly and adds volume without needing a heavy sauce.

LET'S MAKE IT

Harissa Cabbage & Halloumi Bagel with Lemon Yoghurt

Makes 2 servings. Nutrition includes all stated ingredients, toppings, sauces and cooking fat.

Nutrition & tips

Method

1

Soften and colour the cabbage

Heat the olive oil in a 20–24cm non-stick frying pan over medium heat. Add the cabbage and cook for 5–7 minutes, stirring, until softened with some golden edges. Add 1–2 tbsp water if it catches.

2

Add the harissa

Stir in the harissa and 1 tbsp water. Cook for another minute until the cabbage is coated and any loose liquid has evaporated. Transfer to a bowl and keep warm.

3

Brown the halloumi

Pat the halloumi dry. In the same non-stick pan, cook the four thin strips for about 1 minute per side, just until golden. The pan should retain a light film of oil; no extra oil is included in the estimate.

4

Toast and assemble

Toast the bagels lightly for about 60 seconds. Mix the yoghurt and lemon juice. Divide the sauce, cabbage and halloumi equally between the two bagels and serve while warm.

Nutrition & tips

Estimated nutrition per complete stated serving: 290 kcal; protein 28.7g; net carbs 8.2g; sugars 5g; fibre 5.4g; fat 15.2g; saturates 4.9g; salt 1.2g.

One serving is one whole bagel with 25g halloumi and half the cabbage and yoghurt. The small amount of cheese is deliberate: the bagel itself supplies almost 19g protein. The estimate allows 350 kcal per 100g harissa; choose a paste at or below that value and made without rapeseed oil. If your pan needs additional oil, count it and recheck the under-300 total.

Nutrition is estimated using current SRSLY product values and representative ingredient labels. UK carbohydrate values already exclude fibre: do not subtract fibre again. Values vary with brands and actual weighed portions.
