A NEW WAY WITH YOUR FAVOURITES

Mushrooms meet melting Brie.

Cook the mushrooms until their moisture has gone and their edges are properly golden, then melt the Brie into the warm filling. A measured spoonful of cranberry brings a sweet-sharp contrast without taking over the bagel.

LET’S MAKE IT

Nutrition & tips

Method

1

Brown the mushrooms

Heat the olive oil in a 28cm non-stick frying pan over medium-high heat. Add the mushrooms in an even layer and leave for 2 minutes before stirring. Cook for a further 6–8 minutes, stirring occasionally, until the liquid has evaporated and the edges are golden.

2

Wilt the spinach

Stir in the thyme, pepper and spinach. Cook for 1–2 minutes until the spinach has wilted and no watery liquid remains in the pan. Divide the mushroom mixture into two heaps.

3

Melt the Brie

Lower the heat and put half the Brie over each mushroom heap. Cover the pan for 1–2 minutes until the cheese softens and melts into the mushrooms. Meanwhile, lightly toast the bagel halves for around 60 seconds, following the pack guidance.

4

Build the bagels

Spread each bagel base with 1 tsp mustard and each lid with half the cranberry sauce. Lift one mushroom-and-Brie heap onto each base, add the lid and serve with half the leaves. Any filling that falls out belongs on the same plate and is included in the serving.

Nutrition & tips

Estimated per serving: 1 whole filled sesame bagel plus half the accompanying leaves.

Estimated per complete serving: 368 kcal; protein 32g; net carbs 11.6g; sugar 6.8g; fibre 6.4g; fat 20.1g; saturates 7.7g; salt 1.3g.

Estimated UK carbohydrate: 11.6g per serving. UK carbohydrate already excludes fibre, so fibre has not been subtracted again. Net carbs use the featured SRSLY product’s published net-carb figure, accounting for its listed polyols once. These are estimates; brands, drained weights and portions change the numbers.

Use a wide pan: crowded mushrooms steam instead of browning. If yours is smaller, cook in two batches, sharing the measured oil between them.

Cranberry sauces differ greatly in sugar and calories. The estimate uses a representative sauce at 150 kcal per 100g; check your jar and keep the stated 15g portion.

The bagel uses pale sesame seeds. Extra butter, mayonnaise or a larger cheese serving changes the nutrition.

Allergens: Wheat/gluten, oats, sesame, soya, milk and mustard. Check cranberry sauce for sulphites; check cheese suitability if serving to vegetarians.
