Makes 2 servings. Nutrition includes all stated ingredients, toppings, sauces and cooking fat.

Nutrition & tips

Method

1

Take your time with the onions

Heat the olive oil in a 24cm non-stick frying pan over medium-low heat. Add the onions and thyme and cook for 25–30 minutes, stirring often, until soft and deeply golden. Add a tablespoon of water if they start catching; do not add sugar.

2

Finish the filling

Stir the balsamic vinegar into the onions and cook for 1–2 minutes until the excess liquid has evaporated. Transfer to a bowl and wipe the pan.

3

Build two toasties

Spread the mustard on the inside of two bread slices. Divide the onions, Gruyère and mozzarella equally between them and top with the remaining bread. Spread the butter thinly over the outside of both sandwiches.

4

Toast gently

Return the pan to medium-low heat. Cook the toasties for 3–4 minutes per side, pressing lightly, until golden and the cheese melts. Cover loosely for part of the cooking if needed. Cut and serve straight away.
