WHY YOU'LL LOVE IT

Bonfire comfort on golden toast

This portion-controlled twist keeps real cannellini beans in the meal. Finely diced mushrooms give the smoky sauce more body, while SRSLY Soft Sliced Bread makes room for the beans within the carbohydrate budget.

Nutrition & tips

Method

1

Soften the vegetables

Heat the olive oil in a medium saucepan or deep non-stick frying pan over medium heat. Add the onion and mushrooms. Cook for 6–8 minutes until softened and their released moisture has mostly evaporated.

2

Build the smoky sauce

Add the garlic, smoked paprika and cumin. Stir for 30 seconds, then add the chopped tomatoes, cider vinegar and 80ml water. Simmer for 5 minutes, stirring occasionally.

3

Add the beans

Fold in the drained, rinsed cannellini beans and simmer gently for 3–4 minutes until piping hot. Mash a few beans into the sauce to thicken it. Add a splash more water if needed; do not add sugar or sweet barbecue sauce.

4

Toast and portion

Toast all eight bread slices. Divide the bean mixture into four equal portions; each gets one quarter of the batch, including the sauce. Spoon one portion over two slices for each person.

5

Finish with cheese

Top each serving with 20g grated cheddar and briefly grill until melted. Scatter over parsley and serve hot. Nutrition includes both slices, all the sauce, cooking oil and cheese.

Nutrition & tips

Estimated nutrition per complete serving: 305 kcal; protein 20g; net carbs 14.2g; sugars 3.4g; fibre 12.4g; fat 16g; saturates 5.4g; salt 0.9g.

The full batch makes four meals. Use 60g drained beans, one quarter of the sauce, two 20g bread slices and 20g cheddar per meal. Calculation allows 15.7g carbohydrate per 100g drained beans; choose a tin with no more than that amount to maintain the estimate. Bean and tomato labels vary, so check the packs before relying on the under-15g target. This is a modest bean portion with mushroom-tomato sauce, not a full tin per meal. UK carbohydrate values already exclude fibre: do not subtract it again. Refrigerate leftover sauce within two hours and use within 48 hours, or freeze the sauce separately. Reheat once until steaming hot.

Estimates use 15.7g carbohydrate per 100g drained cannellini beans and 3.6g per 100g chopped tinned tomatoes. Check your chosen labels: beans with more carbohydrate can take this meal over the target.

Calculated using UK carbohydrate values, with fibre already excluded. Do not subtract fibre again. Nutrition and cooking times are estimates pending kitchen testing.
