A NEW WAY WITH YOUR FAVOURITES

A proper crunch at lunchtime.

Four individual Scotch eggs make four substantial lunches when served with the full slaw and dip. Lean beef replaces the usual sausage meat, and homemade SRSLY crumbs give the outside its crisp texture. The eggs are cooked until set, so the finished centres are firm rather than runny.

Why you’ll love it

Protein in this serving

Approximately 32.3g protein from beef, egg, yoghurt and the bread coating.

LET’S MAKE IT

Beef Scotch Eggs with Mustard Yoghurt & Apple Slaw

Nutrition & tips

Method

1

Cook and cool the eggs

Carefully lower 4 eggs into a saucepan of gently boiling water. Simmer for 9–10 minutes for set centres, then transfer to cold water for 5 minutes. Peel carefully and pat completely dry. Keep the fifth egg for the coating.

2

Make fine crumbs

While the eggs cool, heat the oven to 150°C fan / 170°C conventional. Tear the bread onto a tray and dry for 10–12 minutes until crisp but not dark, then cool and blitz finely. The full original bread weight is counted in the nutrition.

3

Wrap with beef

Mix the beef with 2 tsp mustard, parsley, paprika and half the pepper, just until combined. Divide into four equal 75g portions. With damp hands, flatten each between baking paper into an approximately 12cm disc. Place a dry peeled egg in the middle and carefully draw the beef around it. Pinch every seam closed and gently roll to an even shell, without bare patches.

4

Coat and chill

Beat the remaining egg in a shallow bowl. Dip each beef-wrapped egg in it, allow excess to run back, then press into the crumbs to coat all sides. Use the crumbs across all four. Chill for 15 minutes to firm the coating. Discard any coating mixture that has contacted raw beef; the estimate counts all of it.

5

Air-fry safely

Preheat the air fryer to 180°C. Brush all four Scotch eggs evenly with the measured 2 tsp olive oil in total. Cook in one layer with gaps for 20–25 minutes, turning carefully halfway. Use batches if needed. Check the beef shell in the thickest part using a clean probe: 75°C for at least 30 seconds, or 70°C for 2 minutes. Cook longer if required; a golden crumb alone does not show that the beef is cooked.

6

Make the slaw and dip

Mix the yoghurt with the remaining 2 tsp mustard and remaining pepper. Toss the cabbage, carrots and apple with all the lemon juice. Serve one Scotch egg per person, cut into two halves, with one-quarter of the slaw and 40g of the yoghurt mixture.

Nutrition & tips

Estimated per serving: 1 beef Scotch egg, 40g mustard yoghurt and one-quarter of the apple slaw.

Estimated per complete serving: 314 kcal; protein 32.3g; net carbs 11.9g; sugar 9.8g; fibre 5g; fat 13.6g; saturates 4g; salt 0.8g.

Estimated UK carbohydrate: 11.9g per serving. UK carbohydrate already excludes fibre, so fibre has not been subtracted again. Net carbs use the featured SRSLY product’s published net-carb figure, accounting for its listed polyols once. These are estimates; brands, drained weights and portions change the numbers.

An even, fully closed beef shell helps the Scotch eggs hold together. Dry the peeled eggs well and chill after coating.

For an oven version, cook on a non-stick tray at 190°C fan / 210°C conventional for approximately 25–30 minutes, turning once and checking the same safe beef temperature.

Use the full apple slaw and yoghurt portion for a lunch. A Scotch egg on its own is a smaller serving with different nutrition.
