WHY YOU'LL LOVE IT

Your loaf has more than sandwiches in it

Turn Soft Sliced Bread into breadcrumbs for this roast-dinner favourite. A measured splash of stock and an egg help the crumbs bind; resting the mixture gives the bread time to absorb the moisture before shaping.

Familiar food, with nutrition made clear

Protein from familiar ingredients

Approximately 8.6g protein per three-ball side, from the SRSLY breadcrumbs and egg.

Fibre built into your plate

Approximately 4.9g fibre per three-ball side. Using the whole slice for breadcrumbs keeps the loaf working in a different way.

Keep a freezer staple ready

Keep a pack of SRSLY Soft Sliced Bread in the freezer and use only what you need. Follow the pack storage and defrosting instructions.

Nutrition & tips

Method

1

Make the breadcrumbs

Heat the oven to 140°C / 120°C fan. Tear the bread onto a tray and dry for 10–12 minutes until dry to touch but not darkly toasted. Cool briefly, then pulse into coarse crumbs. The 120g weight is before drying, not the finished crumb weight.

2

Soften the onion

Meanwhile melt the butter in a small non-stick frying pan over medium-low heat. Cook the onion for 8–10 minutes until soft, adding a small splash of water if it catches. Stir in the sage for the last minute, then cool slightly.

3

Mix, rest and shape

Combine the crumbs, onion mixture and parsley with the beaten egg and 30ml stock. Rest for 10 minutes. Add more stock, a teaspoon at a time, only if too dry to hold together. With damp hands form 12 equal small balls. The nutrition allows for the full 60ml stock.

4

Air-fry until golden

Preheat the air fryer to 180°C. Place the balls in a single layer with gaps, cooking in batches if needed. Air-fry for 10–13 minutes, turning carefully halfway, until golden and steaming hot in the centre. Serve three balls per person as a side.

Nutrition & tips

Estimated nutrition per three-ball side serving: 111 kcal; protein 8.6g; net carbs 2.8g; sugars 1.2g; fibre 4.9g; fat 6g; saturates 2g; salt 0.4g.

Makes 12 small balls: a serving is 3, as a side dish—not a complete meal. Gravy and roast-dinner accompaniments are not included. The mixture should hold together without being wet. This gives a practical way to use bread for crumbs rather than another sandwich.

Nutrition is estimated using current SRSLY product values and representative ingredient labels. UK carbohydrate values already exclude fibre: do not subtract fibre again. Values vary with brands and actual weighed portions.
