LET'S MAKE IT

Apple & Cinnamon Fruit Bread Crumble Pots

Makes 2 servings. One serving: 1 pot plus 80g yoghurt (dessert). Nutrition includes every stated ingredient, cooking fat, topping, dip and side.

Nutrition & tips

Method

1

Soften the apples

Heat the oven to 180°C fan / 200°C conventional. Put the apples in a small saucepan with 1 tsp butter, cinnamon, vanilla and 2 tbsp water. Cover and cook gently for 6–8 minutes, stirring, until softened at the edges but still holding their shape.

2

Make the fruit-bread topping

Blitz or rub the bread into rough crumbs, keeping its fruit pieces. Melt the remaining 1 tsp butter gently and toss through the crumbs so they are evenly coated.

3

Fill and bake

Divide the apples and their juices between two 200–250ml ovenproof ramekins. Top each with half the crumbs. Put on a tray and bake for 15–18 minutes until the top is crisp and lightly golden and the apples bubble around the edges. Loosely cover if the fruit in the bread colours too quickly.

4

Add the yoghurt

Let the pots stand for 5 minutes. Serve each with 80g of the yoghurt. The full yoghurt serving is included in the nutrition; no honey, syrup, sugar or ice cream is included.
