LET'S MAKE IT

Crispy Lemon & Chive Tuna Fishcakes with Yoghurt Dip

Makes 2 servings. One serving: 2 fishcakes, dip and salad. Nutrition includes every stated ingredient, cooking fat, topping, dip and side.

Nutrition & tips

Method

1

Make the crumbs

Heat the oven to 150°C fan / 170°C conventional. Tear the bread onto a tray and dry for 10–12 minutes until crisp but not dark. Cool briefly, then blitz or grate into fine crumbs. Divide the finished crumbs into two equal piles; the nutrition counts both original slices.

2

Shape and chill

Squeeze excess water from the tuna. Mix it with half the crumbs, all the egg, spring onion, half the lemon juice, half the mustard, chives and pepper. Rest for 5 minutes so the crumbs absorb moisture. Shape into four firm patties, about 7cm wide and 2cm thick. Press the remaining crumbs over both sides. Chill for 15 minutes.

3

Air-fry until golden

Preheat the air fryer to 180°C. Brush the fishcakes and the basket lightly using the measured 1 tsp oil in total. Arrange in one layer with space around them; cook in batches if needed. Cook for 12–15 minutes, turning carefully after 8 minutes, until the coating is golden and the centre is piping hot and set.

4

Mix the dip and serve

Stir the yoghurt with the remaining lemon juice and mustard. Divide the cucumber and leaves between two plates, add two fishcakes each and divide all the dip between them. Serve straight away.
