Nutrition & tips

Method

1

Cook the peas

Cook the peas in a small saucepan of boiling water for 3–4 minutes, following the pack instructions. Drain thoroughly and let steam escape for a minute.

2

Make a rough mash

Crush the peas with the olive oil, lemon juice, mint and pepper. Keep some whole peas for texture.

3

Toast lightly

Toast the split bagels for about 60 seconds, or until the cut faces are lightly crisp. Avoid darkening the sesame seeds.

4

Pile and finish

Divide the lettuce and pea mash across all four bagel halves. Dot with all the ricotta. Serve both halves of one bagel per person, open-faced so the topping stays in place. Scatter the measured lemon zest over the ricotta.

Nutrition & tips

Estimated per serving: 1 whole bagel with half the topping.

Estimated per complete serving: 255 kcal; protein 25.9g; net carbs 13.3g; sugar 6.5g; fibre 7.9g; fat 10.6g; saturates 3.0g.

UK carbohydrate already excludes fibre, so fibre has not been subtracted again. Net carbs use the featured SRSLY product’s published net-carb figure, accounting for its listed polyols once. These are estimates; brands, drained weights and portions change the numbers.

The estimate uses ricotta at 103 kcal per 100g; brands can be materially richer. Check your pack if keeping the complete serving below 300 kcal.

One whole bagel, 80g peas, 40g ricotta and half the oil make one lunch. Do not halve the bagel to achieve the stated estimate.

This is best assembled just before eating, while the toast is crisp and the peas are still warm.

Allergens: Wheat/gluten, sesame and milk. Check the bagel pack for other allergens. Also contains soya, oats in the featured bakery product.
