Made for the first dunk.

This is a weekend-cooking kind of lunch: let the beef become tender slowly, then reduce its cooking juices until they taste rich and coat a spoon. The roll stays recognisably bread-sized, with a generous beef filling and all the gravy included in the nutrition.

LET’S MAKE IT

Slow-Cooked Beef Dip Rolls with Mustard & Rich Gravy

Makes 4 servings. One serving is 1 filled seeded roll with one-quarter of the beef, onions and gravy. All stated cooking fat, coating, sauces, toppings and sides are included in the estimates. Approximate total time: 9–10 hours.

Nutrition & tips

Method

1

Brown the beef

Pat the beef dry. Heat the olive oil in a 28cm heavy frying pan over medium-high heat. Brown the beef in two batches for 3–4 minutes per batch, turning to colour several sides. Transfer to a 3.5–4.5 litre slow cooker. The beef will finish cooking slowly; it is not ready to eat yet.

2

Build the gravy base

Lower the pan heat. Add the onions with 2 tbsp of the measured stock and cook for 5 minutes, stirring. Add the garlic and tomato purée for 1 minute. Pour in the remaining stock, Worcestershire sauce, thyme and pepper. Scrape up the browned bits and bring to a simmer, then pour over the beef.

3

Cook until it pulls apart

Cover and cook on LOW for 8–9 hours, following your slow cooker’s minimum-fill guidance. The beef should pull apart easily with two forks; if it resists, cook a little longer with the lid on. The liquid need not cover the meat, but do not open the lid repeatedly.

4

Reduce the gravy

Lift the beef onto a deep plate. Pour all the onions and cooking liquid into a wide saucepan and simmer uncovered for 15–20 minutes until rich and slightly thickened. Shred the beef, keeping its juices. Return any resting juices to the saucepan, then mix a few spoonfuls of gravy through the beef. Divide the beef and every remaining spoonful of gravy into four equal portions.

5

Warm, fill and dip

Split the rolls and warm the cut faces briefly in a dry pan. Spread each with 1 tsp mustard and fill with one-quarter of the beef and onions. Serve the corresponding gravy in a small jug for dipping. No cheese, butter or extra sides are included in the stated serving.

Nutrition & tips

Estimated per serving: 1 filled seeded roll with one-quarter of the beef, onions and gravy.

Estimated per complete serving: 583 kcal; protein 58.1g; net carbs 9.7g; sugar 4g; fibre 8.1g; fat 32.1g; saturates 9.5g; salt 1.7g.

Estimated UK carbohydrate: 9.9g per serving. UK carbohydrate already excludes fibre, so fibre has not been subtracted again. Net carbs use the featured SRSLY product’s published net-carb figure, accounting for its listed polyols once. These are estimates; brands, drained weights and portions change the numbers.

Choose beef intended for long, slow cooking; a lean frying steak will not give the same pull-apart result. The timings include browning and reducing as well as the long slow cook.

The nutrition uses a representative raw braising-beef value and divides the complete batch into four, including all cooking oil and gravy. Chuck fat content and cooked yield vary, so weigh equal portions after cooking.

Keep the remaining SRSLY rolls ready in the freezer and follow their pack storage and defrosting guidance.
