A NEW WAY WITH YOUR FAVOURITES

Creamy comfort. A little crunch.

Roasting brings out the cauliflower’s savoury sweetness; cottage cheese blends into a smooth, creamy soup. Garlic croutons made from a full slice of SRSLY bread finish each generous bowl. All the croutons and measured roasting oil are included in the estimate.

Why you’ll love it

Protein in a creamy bowl

Cottage cheese and the bread contribute protein without a cream-based finish.

Vegetables and fibre

A substantial cauliflower portion and the croutons contribute fibre to this lunch.

A freezer staple

A slice from a frozen loaf is useful for making a fresh, crunchy crouton topping. Shop SRSLY Soft Sliced Bread

Nutrition & tips

Method

1

Roast the vegetables

Heat the oven to 190°C fan / 210°C conventional. Toss the cauliflower, onion and unpeeled garlic clove with 1½ tsp of the measured oil on a 30 × 20cm non-stick tray. Roast for 25–30 minutes, turning once, until tender with lightly golden edges.

2

Crisp the bread

Toss the bread cubes with the remaining ½ tsp oil and the grated garlic. Spread on a separate small non-stick tray and bake for 8–10 minutes alongside the vegetables, watching closely. Remove when crisp and golden.

3

Blend smooth

Squeeze the roasted garlic from its skin. Reserve 4 small cauliflower florets for the two bowls. Blend the remaining vegetables with the cottage cheese and stock until very smooth. With a jug blender, cool the vegetables slightly first and follow its hot-liquid instructions; blend in batches if needed.

4

Warm gently

Pour into a 1.5–2 litre saucepan. Heat gently, stirring, until steaming hot throughout; avoid a rolling boil. Add a little water if needed for a spoonable consistency. Season with the pepper.

5

Serve the whole bowl

Divide all the soup between two generous bowls, aiming for roughly 500ml each after blending. Add the reserved cauliflower, half the croutons and half the chives to each. The full crouton portion is included; no cream or extra oil drizzle is needed.

Nutrition & tips

Estimated per serving: 1 generous bowl with half the croutons.

Estimated per complete serving: 246 kcal; protein 22.0g; net carbs 20.9g; sugar 13.9g; fibre 8.2g; fat 7.8g; saturates 1.2g.

UK carbohydrate already excludes fibre, so fibre has not been subtracted again. Net carbs use the featured SRSLY product’s published net-carb figure, accounting for its listed polyols once. These are estimates; brands, drained weights and portions change the numbers.

Use fat-free cottage cheese for the stated estimate. Full-fat cheese or a cream swirl changes it.

Stock salt varies considerably. Taste before adding salt, and use a reduced-salt stock if preferred.

The cauliflower, cottage cheese and one slice of croutons make up the complete stated lunch serving. Extra bread is additional.

Allergens: Wheat/gluten, oats and milk; stock may contain celery. Check all labels. Also contains egg in the featured bakery product.
