A NEW WAY WITH YOUR FAVOURITES

Golden crumbs. A savoury centre.

Dry, finely blitzed seeded bread makes the crisp coating around these potato-free cauliflower croquettes. Softened leek and mature cheddar give the centre flavour. Serve three with their portion of mustard yoghurt as a side dish.

Why you’ll love it

Cheddar and yoghurt contribute protein

The cheese filling and yoghurt dip add protein to this side dish.

Vegetables beyond the filling

Cauliflower and leek add texture, while the seeded crumb contributes fibre.

A freezer staple

Nutrition & tips

Method

1

Dry the crumbs

Heat the oven to 140°C fan / 160°C conventional. Tear the bread onto a tray and dry for 12–15 minutes until crisp, not dark. Cool, then blitz finely. Weigh the bread before drying.

2

Remove the moisture

Steam the cauliflower for 10–12 minutes until very tender. Cool until safe to handle, then squeeze firmly in a clean tea towel to remove as much water as possible; aim for roughly 200–230g drained cauliflower. Mash thoroughly. In a small non-stick pan, soften the leek in the butter with 1 tbsp water for 8–10 minutes, until tender and dry. Cool.

3

Mix and chill

Mix the cauliflower, leek, cheddar, flour, half the beaten egg, pepper and one quarter of the crumbs. The mixture should hold its shape when squeezed. Cover and chill for 45 minutes until firm. Reserve the remaining egg, covered, in the fridge.

4

Shape and coat

Divide into 12 equal portions and shape into short cylinders, about 5cm long. Brush each with the remaining egg and press into the remaining crumbs. Any coating or egg left over is still counted in the estimate; discard it if it has touched raw egg.

5

Air-fry until crisp

Heat the air fryer to 180°C. Brush every croquette all over with the measured olive oil. Cook in one layer with space between, in batches if needed, for 12–16 minutes, turning carefully halfway. They should be golden, firm and steaming hot; the centre should reach 75°C for 30 seconds. Alternatively bake on a non-stick tray at 190°C fan / 210°C conventional for 20–25 minutes.

6

Make the dip

Mix the yoghurt, mustard and lemon juice. Divide all the dip between four small bowls and serve with 3 croquettes per person. This is a side dish; pair it with a main chosen to suit your meal.

Nutrition & tips

Estimated per serving: 3 croquettes and one quarter of the dip (side).

Estimated per complete serving: 268 kcal; protein 17.4g; net carbs 11.3g; sugar 5.1g; fibre 4.9g; fat 16.5g; saturates 6.3g.

UK carbohydrate already excludes fibre, so fibre has not been subtracted again. Net carbs use the featured SRSLY product’s published net-carb figure, accounting for its listed polyols once. These are estimates; brands, drained weights and portions change the numbers.

Moisture control matters: steaming, squeezing and chilling make the potato-free mixture easier to shape.

Use fine, dry crumbs and leave space in the basket. A crowded basket softens the coating. Allow extra elapsed time when cooking in batches.

Three croquettes and one quarter of the dip form one side serving. Nutrition does not include a separate main dish.

Allergens: Wheat/gluten, oats, egg, milk and mustard. Check bread and mustard labels. Also contains sesame in the featured bakery product.
