Makes 2 servings. One serving is 1 whole filled wrap. All stated cooking fat, coating, sauces, toppings and sides are included in the estimates. Approximate total time: 35 minutes.

Nutrition & tips

Method

1

Quick-pickle the onion

Toss the sliced onion with the vinegar and water in a small bowl. Leave while you cook. All the pickle ingredients are counted in the estimate.

2

Shape the koftas

Mix the beef with the squeezed grated onion, half the garlic, parsley, cumin, coriander, paprika, salt and half the pepper. Shape firmly into 6 short, evenly sized koftas, around 2cm thick.

3

Brown and cook through

Heat the olive oil in a 24–26cm non-stick frying pan over medium heat. Cook the koftas for 10–14 minutes, turning regularly, until well browned and cooked through. Reduce the heat if the spices catch. Check the thickest part reaches 75°C for 30 seconds, or 70°C for 2 minutes.

4

Stir the yoghurt

Combine the yoghurt, mint, remaining garlic, lemon juice and remaining pepper. Thin with a teaspoon of water only if needed.

5

Fill and fold

Warm each wrap briefly in a dry pan. Divide the lettuce, tomato, cucumber, koftas, onions and all the yoghurt between them. Fold the base up, then roll the sides in. Serve one whole wrap per person.

Nutrition & tips

Estimated per serving: 1 whole filled wrap.

Estimated per complete serving: 385 kcal; protein 48.3g; net carbs 13.8g; sugar 7.5g; fibre 8.8g; fat 13.6g; saturates 3.8g.

UK carbohydrate already excludes fibre, so fibre has not been subtracted again. Net carbs use the featured SRSLY product’s published net-carb figure, accounting for its listed polyols once. These are estimates; brands, drained weights and portions change the numbers.

Squeeze the grated onion well so the koftas hold together. Chill the shaped koftas briefly if the mince feels very soft.

Use lean mince labelled 5% fat; higher-fat mince changes the estimate. No fat drained from the pan has been deducted.

The vegetable filling is part of the serving. Extra hummus, chips or dressing adds to the figures.

Allergens: Wheat/gluten and milk. Check wrap and spice labels.
