Nutrition & tips

Method

1

Prepare the dish

Heat the oven to 180°C fan. Line a small 16cm square baking tin with baking parchment and brush with the olive oil. The egg layer will be fairly thin, so each portion is folded to fit the bagel.

2

Mix the frittata

Whisk the eggs and egg whites until combined. Stir in the sun-dried tomatoes, spring onion and herbs with a little black pepper. Pour evenly into the prepared tin.

3

Bake until set

Bake for about 15–20 minutes until the centre is fully set with no liquid egg. Ovens and tin sizes vary; check the middle rather than relying on the clock. Rest for 5 minutes, then divide into four equal portions.

4

Fill the bagels

For serving now, lightly toast the bagels, fold one frittata portion into each and add 20g smoked cheddar. Place open under a medium grill for 1–2 minutes until the cheese melts, then close.

5

Prepare ahead

For freezing, cool the frittata promptly, assemble with untoasted bagels and cheese, wrap individually and freeze within two hours of cooking. Only use bread suitable for freezing that has not already been defrosted where the pack prohibits refreezing.

6

Reheat safely

Defrost overnight in the fridge, never on the worktop, and use within 24 hours of fully defrosting. Remove foil before microwaving; heat until steaming hot throughout, then crisp briefly in the oven or air fryer if desired. Reheat once only. Fresh salad can be added after reheating; extras change nutrition.

Nutrition & tips

Estimated nutrition per complete serving: 315 kcal; protein 34g; net carbs 5.6g; sugars 2.4g; fibre 4.1g; fat 17g; saturates 6g; salt 1.2g.

Nutrition is per one of four filled bagels, including its share of oil. For freezing, check the bread's storage history and pack instructions; if your bagels have already been defrosted and must not be refrozen, freeze only the freshly cooked frittata portions and assemble with a separately toasted bagel. Keep chilled cooked filling for up to 48 hours or freeze promptly; use frozen portions within one month for best quality. Inspired by the make-ahead bagel idea shared by @emthenutritionist, with a new SRSLY formulation and method.

Estimates use smoked cheddar at 410 kcal per 100g, cooked egg and pasteurised egg-white reference values. Cheese and sun-dried tomato brands change the result.

Calculated using UK carbohydrate values, with fibre already excluded. Do not subtract fibre again. Nutrition and cooking times are estimates pending kitchen testing.
